We went out to dinner for Misty’s birthday Sunday night so we’ll do the show Monday night instead. Plus well, we didn’t have power either due to a wind storm, and I’m not sure if the drone of a generator would be the perfect accompaniment to the show. We’ll get the show done Monday night. While you wait, why not check out the new webcam images? I upgraded the webcam over the weekend so it gets much better pictures. If you click on high res, you can get a high res image, but it’s only updated once every fives minutes. I also put a popout link on the page so it can open it’s down window. You can resize the window too and have the image follow.

Honey Pecan Pie Recipe

9″ unbaked pastry shell
3 eggs
1 cup honey
1 tsp vanilla
1 tbspn butter melted and cooled
1/4tsp salt
1 cup broken toasted pecans

Chill pastry shell. Preheat over to 400. Beat the eggs till they are light and frothy, then add the rest of ingredients except the pecans. Beat till smooth. Mix in the pecans and immediately pour into the pie crust. Bake for 10 minutes, then turn the oven down to 300f and bake for 25 minutes. Test to make sure the pie is done and set.

Benefits:
Adjustable seed depth, row width. Plate controls how far apart each seed is dropped.
Cut the time to plant the garden by something like 90%, and no sore back after!
Negatives
Need to till the soil
Must be relatively flat
Twigs, sticks may be caught in it as you are going through the soil
Need a good amount of seed, may not work on small sampler packs
Loss at the end of row, very short rows don’t work well
Conclusion – We love it so far, waiting to see how germination is!

Welcome to another great show!

This week we revisit an old topic, our portable fencing we use. Instead of mowing all summer long we have the sheep and goats trim our grass. It’s warm enough to be back out in the the barn this week!! We have 3 great farm phone calls. I have a special request though. We’re going to be out of town for 3 weekends, and I want to put together some shows while we’re on the road. It will basically be farm phone sections, so that means I need your calls to the farm phone at 206-202-GOAT. Give us tips, give us stories, ask questions. Be as long as you like, call back if you’re cut off after 5 minutes.

Where we bought pink salt: Pink Salt. As promised $2. Might want to combine it with something to help shipping costs.

Basic Cure:

1 pound kosher salt
8 ounces sugar
2 ounces pink salt

Combine, store in airtight container. Lasts indefinably.

Fresh Bacon:

3-5 pound pork belly
about 0.25 cup basic cure, or enough to dredge the meat

Optional:

For a sweeter bacon add 1/2 cup maple syprup, or 1/2 cup maple suger, or 1/2 cup brown sugar
For a more savory bacon add ~5 cloves of garlic, 3 crushed bay leaves, 1 tablespoon very coarse peppercorn.

Trim the belly square. Spread the cure out in a dish large enough to accommodate the belly. Press all sides of the belly into the cure. Place the belly in a zip lock back. I found 3lbs fit into a 1 gallon bag. Flip the belly once a day for 7 days. After 7 days remove the belly from the cure, rinse well. Rest in fridge covered for up to 3 days.

For the oven: Heat over to 200f. Place the belly in a roasting pan and roast until it reached 150f.

For the smoker: Smoke till it reaches an internal temperate of 150f. Should take about 3 hours. Our bacon was pretty thin so the smoker around 180f was nice. Adjust as needed.

If the skin is still attached, remove while hot by slicing between the fat and skin with a knife. Our bellies already had the skin removed. Chill.

Once chilled it can be kept for up to 2 weeks in the fridge, slice as required. You can cut thick slices to use as lardon, or thin as bacon. If you don’t plan on using it right away slice and freeze.

Ham Hocks

1 gallon water
1.5 cup kosher salt
1 cup sugar
1.5 ounces pink salt
8 fresh ham hocks, about 8 lbs

I did only 1 hock, and cut the cure by 1/3rd and it worked well.

Combine all the brine ingredients in a large pot and bringe to a simmer and stir until dissolved. Refrigerate till well chilled. Add the hocks to the brine, and weight them down with a plate to keep them submerged. Brine for 3 days. Remove the hocks, rinse, dry, and then refrigerate for 8 hours. Roast or hot smoke till they reach an internal temperature of 150f. Chill.

This weeks show is done late in the barn, most of the animals are asleep so it’s not the roar cacophony you’re used to. It’s rather long since we spend a long time going over the farm phone calls, so hopefully that will answer your questions that have come up about recent shows. In the show this week:

Recipe is given in the full post. (click on the more link)

Feta Ingredients:

1.5 gallons, 6 liters of milk (cow, goat, sheep, or store bought milk is file)
1/4 tsp Mesophilic Cheese Culture or 1/2 cup butter milk
1/2 tsp liquid rennet, or renner tablet as per instructions
1/8 tsp Lipase, optional, and to taste
Non-iodized salt, like kosher salt

Steps:

Warm Milk to 86f/30c
Add culture, let sit on top for 2-3 minutes then stir in
Let milk ripen for 45 minutes for raw milk, 1 hour for pasteurized milk
Optional: Dissolve lipase into 1/4cup of water, then mix into milk
Dissolve liquid rennet into 1/2 cup of water
Stir the rennet into the milk with 20 good top to bottom stirs
Let the milk sit until a firm curd forms, 30-45 minutes
Cut the curds into 1/2 cups, then let sit for 5 minutes
Stir for 20 minutes. If you want a firmer cheese raise the temperature to 90f as you stir
Drain the whey, then either hang in cheese cloth or in molds as described in the podcast
After draining/hanging for 24 hours cut the cheese into 1-2″ cubes.
Salt the cubes, then let sit for 24 hours. Roll the cubes over and salt again, let sit 24 hours
Repeat for 3 days until the cheese is firm. Drain any whey that builds up.
Put cubes in jars (quart mason jars work well) and fill with light or medium salt solutions

Light Salt Solution: 14oz of salt/gallon
Medium Salt Solution: 20oz of salt/gallon

If you don’t want to make a gallon of solution scale as required.

Barncast 80 — Inside a beehive

This weeks show is a little different. We’ve had a very long busy weekend and Misty needed a rest so I’m doing the show solo. I really wanted to do a tour of a beehive to show you what was inside but the weather this weekend was not cooperating. You normally want to work on beehives on sunny warm days. It was 75 out, but it had been raining all day so the bees would all be home and probably grumpy. So I suited up all the way and went out anyways and did a sound seeing tour as I walked though a hive. It’s not the most organized, but I think you’ll enjoy the sounds and the tour!

We’re back inside this week, it’s just too hot outside and after working outside most of the day in the hot kitchen it was nice to sit down in the cool living room and do a show. This week we look at what to do with all the extra honey we’re getting. Making Mead is something anyone can do at home, it’s not very expensive to get setup, a lot of fun, and the end product isn’t bad at all.

This weeks show is a little different. I’m down under, and Misty is busy taking care of chores at home all by herself. We recorded this show while we did the chores on or around the 15th. I put the binaural microphones to my ears, took the camera and walked around the farm taking pictures and talking about what’s going on. This podcast would really benefit from being listened to with headphones due to the way it was recorded, it will make you feel like you are there with me.

I took pictures as I went, and you can hear the camera going off every time. Just use that to know when to change picture. It also means I couldn’t remove bad pictures, so you get the good with the bad. I hope you can follow along.

It’s summer so we’ve basically stopped podcasting from the barn for a bit, it just get’s way to hot up in the hayloft (attic) of the barn when it’s >90f/30c outside and the sun is beating down on the roof all day. Instead we’re out back on our patio, with the birds and the wind that picked up due to thunderstorms close by.

We have a less serious show this week. We blaze through the round up in record time, let us know what you think. The main topic is a reality check. Finally as promised here is a cheese walk through! The show really ended up in two parts, the Farm Phone/Round Up and the Cheese walk through. For the second bit make sure you have access to a computer to walk through with us. Now some food snobs out there will note that I do a fairly fast recipe and it won’t have a ton of flavour. That’s the best part though, anyone at home can make this recipe! It only takes milk, citric acid (canning aisle) and rennet (pudding/cooking aisle). From start to finish it only takes 30 minutes, what could be better than that for your first introduction to making cheese?? So listen and follow along at:

Well there’s been some changes since last week. There’s new voices to add to the show, 6 actually! You can hear at least 4 during the show. The ending this week is a little abrupt. After the mixer’s batteries die the batteries on the mp3 recorded died. That brings the show to a rather abrupt end. We were going long anyways, so you must have been saved by the equipment. Baby the goat had her babies today!

Male: 9 lbs
Male: 8.5 lbs

They are cleaned and separated from her, and walking around and bleating. :) I’ll give her another 40 minutes or so before I go out and milk her for the first time, and feed the boys.

Update!

Cream has twin doe’s Feb 27th around noon. Birth was easy and the kids cleaned up very well. They are learning to walk and I’ll get them weighed and fed in a couple of hours.

This brings the total up to 6 babies so far for 2007!

Sorry about the late post, but our internet connection was basically dead all weekend so I couldn’t get the show uploaded. The wind was causing the dish to wobble around too much. Oh well, we’ll talk about it as part of our geek section next week.

In this weeks show! Feed and more feed. We look at how to feed concentrates (grain) to your animals and humans. What forms to buy it, and how to mix your own. I’ll get the mixes online later tonight. All this thanks to a call from Caroline.

She also asked about milling your own wheat and corn meal at home. So we have a hearty discussion about grain mills, where to buy grain, and different types of wheat. If you thought all flour was equal then listen up, there’s something to learn in this section. The mill we have is still made! It’s just changed names, here’s a link to amazon. (no weird referal stuff)
